Sweet and Sour Chicken Pineapple Meatballs
Dinner comes together in a flash with this ultra easy and flavorful sheet pan meal. Chicken Teriyaki meatballs are tossed with stir fry vegetables, pineapple chunks and sweet and sour glaze then all baked up together on a sheet pan.

Some nights there is just not the time or energy to make a complicated dinner. Enter this super simple 4 ingredient dinner that bakes conveniently on one sheet pan.

Sweet and Sour Chicken Meatballs Notes:
For this recipe, I use Aidells Teriyaki and Pineapple Chicken Meatballs from Costco. They are sold in a 46 ounce box if you buy them at Costco, and I am using half of that for this recipe, 23 ounces. If you would like to substitute your favorite Teriyaki style chicken or beef meatball instead, just aim for that 23 ounce range.
A 16 ounce bag of stir fry vegetables is tossed with pineapple chunks and the meatballs and baked until sizzling hot. Drizzle with your favorite Teriyaki glaze after baking and you are all set to go! I love the P.F. Change Mango Sweet and Sour Sauce for this, but you can use your favorite brand. Look for the thicker style glaze sauces rather than the thin marinade.
What to serve with Sweet and Sour Chicken Meatballs
This dinner is filling and delicious as is, but if you’d like, serve with cooked rice or rice noodles.


Sweet and Sour Chicken Pineapple Meatballs
Ingredients
- 23 ounce package Teriyaki and pineapple meatballs thawed (This is half of a Costco package.)
- 16 ounce bag stir fry vegetables thawed
- 20 ounce can pineapple chunks drained
- 2 Tablespoons vegetable oil
- 1 cup P. F. Changs Mango Sweet and Sour Sauce Or you favorite glaze style sweet and sour sauce
Instructions
- Preheat oven to 375-f degrees.
- Spray sheet pan with cooking spray or line with parchment paper. Add the thawed meatballs, stir fry vegetables and pineapple chunks. Drizzle the vegetable oil over and lightly toss to coat.
- Bake for about 22 minutes, or until thoroughly heated through. Remove from oven and drizzle with sweet and sour sauce. Toss to combine. Serve as is or if desired, with cooked rice or noodles.
