Korean Spicy Cheesy Garlic Bread (Air Fryer or Oven)

Let me introduce you to this delicious recipe for Spicy Korean Cheesy Garlic Bread. It has all the wonderful flavors of garlic cheesy bread, but with an added flavor kick and spice from gochujang, a hot pepper paste.

This recipe was actually the first time I recall ever trying gochujang and I loved it. It gives a really wonderful heat that I found addictive. It can be found in most grocery stores these days, found in a red tub.

Saving a bit of money and time

The financial crunch is really crunching these days, so I wanted to include that this recipe still works just fine using dried or jarred minced garlic. Of course, roasted garlic is worth the effort to get that deep garlic flavor, but if saving the money is more worth it to you, go for 1 Tablespoon jarred minced garlic or 1 1/2 teaspoons garlic powder instead. It’s all good! I’ve made it this way and it is delicious.

Notes on freezing

My preferred method of freezing this bread is to cut the bread in half, spread the topping over it, then freeze, unbaked. I find this to get the best results when baking or air frying from a frozen state. Just be sure to freeze the slices individually, meaning they aren’t touching, so that it doesn’t freeze together in one large clump. Once fully frozen, store in freezer bag, removing as much air as you can.

Be sure to adjust the gochujang amount to suit your spice tolerance

I found the original recipe to be the perfect amount, but if you are worried or have a low spice tolerance, consider reducing the amount of gochujang. On the flip side, you can increase it if you like, just keeping in mind that if you use a LOT, it may overpower the flavors a bit.

Ingredients you’ll need

  • 1 whole head garlic + Olive oil (If you prefer, you can use 1 Tablespoon jarred minced garlic or 1 1/2 teaspoons garlic powder instead. If you do this, you can skip the olive oil and add the garlic with all the other ingredients to the butter mixture.)
  • Salt & Pepper
  • 1/2 cup unsalted butter, softened
  • 1/2 cup shredded cheese, your preference (Cheddar was great! You can add extra if you want more cheese)
  • 1 1/2 Tablespoons gochujang hot pepper paste, adjust to your spice tolerance if needed
  • 1/4 cup chopped green onions
  • bread of your choice, I love regular or demi baguettes for their chewiness and crispy outside

Preparation

  • Set your butter out to soften if you haven’t done so already. Cut the top of the head of garlic. Pour 1 Tablespoon of olive oil over the garlic. Sprinkle with salt and pepper. Wrap the entire head in foil and bake at 375-f degrees for 40 minutes. After it has cooled down, push the softened cloves out of the head and into a mixing bowl.
  • To the mixing bowl of garlic, add the softened butter, shredded cheese, gochujang, and chopped green onions. Mix well. Cut your bread in half or in slices and top with as much spread as you prefer. Bake in the oven at 400-f degrees for 10 minutes, or in the air fryer at 375-f degrees for 8 minutes.
  • To freeze, I recommend adding the cheese spread over the bread, then freezing them in an unbaked state. To bake from frozen, follow the same directions as above, adding 1 minute to the cook time.
