Apple Pie Streusel Muffins

Moist and cinnamon sweet, Apple Pie Streusel Muffins are a delicious treat for a snack or to go with a piping hot coffee.

In terms of comfort food, it is hard to beat a freshly baked muffin. Especially one filled with cinnamon, brown sugar and apples! This is a wonderful muffin for a breakfast with a cup of coffee on the side.

Do I have to use buttermilk in this recipe?

If you don’t have buttermilk on hand, use a little less than one cup of milk (or your substitute of choice) with a tablespoon of lemon juice. Let sit for 5 minutes then use in place of buttermilk.

Substituting applesauce in place of brown sugar

According to my google search, if you’d like to reduce the amount of brown sugar in the recipe, you can sub with applesauce on a 1:1 ratio. You should reduce the amount of liquid in the recipe by 1/4 cup. I haven’t personally tried this method but if I do end up trying it, I will update with my results.

Ingredients
  

Topping:

  • 1/2 cup firmly packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup unsalted butter melted
  • 1 teaspoon cinnamon

Muffins:

  • 1 1/2 cups firmly packed brown sugar
  • 2/3 cup vegetable oil
  • 1 large egg
  • 1 1/2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 2 cups diced and peeled firm tart apples such as Granny Smith

Instructions
 

  • Topping: In a small bowl toss together sugar, flour, butter and cinnamon until crumbly; set aside.
  • Muffins: In a large bowl whisk together brown sugar, oil, egg and vanilla until smooth.
  • In a separate bowl, sift together flour, cinnamon, baking soda and salt.
  • Stir oil mixture into flour mixture alternately with buttermilk. Fold in apples, mixing just until combined.
  • Spoon into greased muffin cups filling 3/4 full. Sprinkle topping over evenly.
  • Bake at 350°F for 25-30 minutes or until golden brown and tops spring back.
