Cheesy Shrimp Ciabatta

For out last get together I made this delicious Cheesy Shrimp Ciabatta. This is an appetizer that shrimp fans will love. In our family this is one of our most favorite recipes. It's so delicious!

You can go with a baguette instead if you would like bite sized portions, but it is hard to beat a fresh loaf of ciabatta bread. The baguette slices will get much crunchier so if you prefer that mouth feel, you can go with a baguette. A fresh French bread would also work great. Enjoy!

Twinkies Strawberry Shortcake

Twinkies Strawberry Shortcake is a dessert my daughter came up with and prepared on her own last Easter. It is a fast and easy recipe but super tasty.

This style of dessert is also called a refrigerator cake, in that all the components are already prepared but it is prepared and then chilled for several hours to let the flavors come together.

This is a great potluck or party recipe for Summer. Enjoy!

Note: Do NOT use strawberry glaze, which is sold in the produce section by the chocolate melting chips. It tastes awful. Go for real strawberry jam, preferably this delicious strawberry freezer jam that is our household favorite.

Twinkies Strawberry Shortcake
Makes a large 9 x 13" pan, or larger if desired

Ingredients:
  • 1-2 large boxes of Twinkies, cut in half so that you have two very thin layers of Twinkies (as opposed to 2 large chunks)
  • 1 medium/large container strawberries, washed, hulled and cut into slices
  • 1 cup of good quality strawberry preserves or jam (I used strawberry freezer jam, it is the BEST) -or- a jar of strawberry sundae topping
  • 2 standard sized containers cool whip
  • 1 (8 oz.) package softened cream cheese
Directions:
  1. Prepare the strawberries and set aside. Mix up the jam with a spoon until it loosens up a bit, microwaving a few seconds as necessary. You can also heat it up on the stove top with a little bit of water if you have a really thick jam. (I had a strawberry freezer jam recipe that never really set up so it was more of a sauce and I used that.)
  2. Whip the cream cheese with a hand held mixer until creamy. Add in the cool whips, stirring well.
  3. Cut enough Twinkies to layer the bottom of a large, deep serving dish. Top with half of the cool whip mixture. Top with half of the sliced strawberries. Top with all of the strawberry jam, spreading evenly.
  4. Add the 2nd layer of cut Twinkies. Top with 2nd half of cool whip topping. Finally top with the 2nd half of the sliced strawberries. Chill for several hours before serving.

Neiman Marcus Chicken Salad

This tasty Neiman Marcus Chicken Salad has a secret ingredient that gives the texture of the salad a wonderfully creamy texture. What is it ? Freshly whipped cream folded into the chicken, almond and grape salad. It works and it is wonderful.

Serve on a bed of curly lettuce, with crackers or on a croissant. Enjoy!

I'm not even gonna pretend that this anything but what I call "Trash Food." Every once in a while trash food is the best kind of food, comforting and totally delicious. Chicken Doritos Casserole fits that description perfectly. Enjoy!

Stick of Butter Rice

This delicious side dish was a hit at my house. The raving over this recipe was intense. To put it mildly, everyone loved it.

Personally, I felt that the amount of butter could be cut down a bit in this recipe. I'll leave that up to you guys to decide what you think is best. I think I would go with 1/3 cup and see how that goes next time around. If you have unsalted butter I'd also recommend that you go with that, instead of the standard salted butter. Between the condensed soup and broth, it can get a bit salty.

Note that for this recipe you want to use standard white rice, not instant rice. Enjoy!
