I'm not even gonna pretend that this anything but what I call "Trash Food." Every once in a while trash food is the best kind of food, comforting and totally delicious.
Mexican Dorito Casserole
Serves 4-6
2 c. shredded cooked chicken
1 c. shredded cheese (or more if you are a cheese hound)
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 can Ro-tel tomatoes (canned tomatoes with jalepenos-mild)
1/2 packet taco seasoning (or more- to taste)
Bag of doritos
1. Pre-heat oven to 350-f degrees.
2. In a mixing bowl, combine all ingredients except doritos.
3. In a greased 2 qt baking dish, put a layer of crushed doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.

ReplyDeleteI've died and gone to heaven! I made a casserole similar to this except that I used tortillas for the layers rather than Doritos. It was fabulous! I'm sure with the Doritos' texture, it would add something to it. YUM!!

I also call this trash food but I'm not quite as PC about it b/c I add "white" before the "trash." You know that taco salad made with Doritos, taco meat, and entire bottle of Catalina/French dressing, tons of cheese and a little lettuce? Yup. White trash taco salad. Loves it! I know I would love this one too. Wonder what that says about me? ;)

ReplyDeleteI found this recipe yesterday and made it for diner. It was yummy. I used low-fat (1%) yogurt instead of sour cream, plus, I did not use as much milk and instead of Doritos, I used tortilla chips because I had them at home. I was surpirsed at home much my husband like it. :)
