Tomato, Cream Cheese and Feta Pasta (A Twist on the Tik Tok Pasta)

The famous feta and cherry tomato pasta made the rounds to our house and it certainly lived up to all the hype. I tweaked the recipe to use a little cream cheese for some extra flavor. Enjoy!

Ingredients
  

  • 8 oz. feta cheese full fat
  • 2 oz. cream cheese
  • 16 oz. cherry tomatoes
  • 1 large yellow onion diced
  • 5 whole garlic cloves OR 2 1/2 tsp. jarred minced, OR 1/2 tsp. powdered
  • ½ cup olive oil reserve about 2 tbsp. for drizzling on feta/cream cheese
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp red pepper flakes
  • ½ tsp coarsely ground black pepper
  • 16 oz. dried pasta of choice
  • cup fresh basil chopped, for garnish

Instructions
 

  • Preheat the oven to 450-f degrees with the baking rack in the middle.
  • In a 7″x10″ baking dish (or a similar size, it should all fit snugly in the pan), toss together cherry tomatoes, chopped onion, garlic cloves, dried basil, oregano, red pepper flakes, black pepper and most of the olive oil (reserve about 1-2 tablespoons). Add the block of feta cheese in the middle, with the cream cheese next to it. Drizzle with the reserved olive oil.
  • Bake uncovered for about 30-35 minutes. The tomatoes should be well cooked and soft, and the feta cheese soft. Set aside.
  • Meanwhile, bring a large pot of water to a boil, season it with salt generously, and cook the pasta in the water until al dente.
  • Mash the baked feta, cream cheese and tomatoes together well, then add the drained pasta and stir until the pasta is well coated in the sauce. Garnish with fresh chopped basil and serve.
