Cheesy Shrimp Ciabatta

For out last get together I made this delicious Cheesy Shrimp Ciabatta. This is an appetizer that shrimp fans will love. In our family this is one of our most favorite recipes. It's so delicious!

You can go with a baguette instead if you would like bite sized portions, but it is hard to beat a fresh loaf of ciabatta bread. The baguette slices will get much crunchier so if you prefer that mouth feel, you can go with a baguette. A fresh French bread would also work great. Enjoy!

Reuben Sandwiches with Homemade Thousand Island Dressing

Delicious Reuben Sandwiches with an easy to prepare Thousand Island Dressing. These sandwiches are so tasty and are great comfort food.


Reuben Sandwiches with Homemade Thousand Island Dressing
Makes enough for about 8 sandwiches

  • 16 slices Rye bread
  • 1 lb. pastrami, sliced
  • 1 lb. swiss cheese, sliced
  • 1 can sauerkraut, drained
  • For the Thousand Island Dressing:
  • 1/2 cup mayo
  • 1 Tablespoons ketchup
  • 1 Tablespoon vinegar
  • 2 teaspoons sugar
  • 2 teaspoons sweet pickle relish
  • 1 teaspoon minced onion
  • 1/8 teaspoon salt
  • dash black pepper
  1. Prepare the Thousand Island Dressing: Combine the mayo, ketchup, vinegar, sugar, relish, onion and salt and pepper in a small mixing bowl. Transfer to a small container and chill until ready to use.
  2. Prepare the sandwiches: Lay out all of the pieces of bread into pairs. Add a layer of the prepared Thousand Island dressing onto each slice. Top one piece of bread with cheese and the other with pastrami. Add a spoonful of sauerkraut on top of the cheese. Keeping the sauerkraut in the middle will help the bread to not get soggy. Bring both sides together to form your sandwich. Add a layer of butter to the outside of each piece of bread and grill until cheese has melted and everything is warmed through.

Stick of Butter Rice

This delicious side dish was a hit at my house. The raving over this recipe was intense. To put it mildly, everyone loved it.

Personally, I felt that the amount of butter could be cut down a bit in this recipe. I'll leave that up to you guys to decide what you think is best. I think I would go with 1/3 cup and see how that goes next time around. If you have unsalted butter I'd also recommend that you go with that, instead of the standard salted butter. Between the condensed soup and broth, it can get a bit salty.

Note that for this recipe you want to use standard white rice, not instant rice. Enjoy!
