Barbecued Chicken Pizza with Zucchini and Onion

While pepperoni and cheese will always be the go to classic for pizza, this barbecued chicken pizza adds the taste of summer with thinly sliced zucchini and onions.

Ingredients
  

  • Olive oil for baking sheet
  • All-purpose flour for dusting
  • 1 ball store-bought frozen pizza dough thawed
  • 2 cups shredded, cooked chicken (about 1 1/4 pounds cooked chicken)
  • 1/2 cup store-bought barbecue sauce
  • 2 cups shredded Monterey Jack cheese
  • 1 small zucchini halved lengthwise and thinly sliced
  • 1 small small onion halved and thinly sliced
  • Coarse salt and ground pepper

Instructions
 

  • Preheat oven to 450-f degrees. Lightly oil a large baking sheet; set aside.
  • On a lightly floured work surface, use a rolling pin and your hands to roll and stretch dough to a 15-by-10-inch oval (if dough becomes too elastic to work with, let rest a few minutes). Transfer to prepared baking sheet.
  • In a medium bowl, combine chicken and barbecue sauce. Leaving a 1-inch border, scatter chicken mixture evenly over dough; sprinkle with cheese, then zucchini and onion. Season with salt and pepper.
  • Bake until crust is golden and cheese is melted, about 20 minutes. Serve immediately.

  10. Yum! I love the zuchinni on top. BBQ chicken pizza is the only kind my oldest daughter likes. We make pizza periodically and from scratch. I found a dough that is quick and really yummy. I can have the pizza ready to go into the oven in about 30 minutes if I keep moving. I either buy sauce, but often like to make it homemade too…my mom always did and it's just stuck with me.
