Apologies for the photo quality. This one is from WAY back, probably 20 years ago

To finish them off, they are rolled around in a mixture of coconut, sugar and cinnamon. They are delicious, and very sweet.

Ingredients

  • 4 large sweet potatoes cooked
  • 2/3 cup packed brown sugar
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon freshly grated nutmeg
  • 2 cups shredded coconut sweetened
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 bag large marshmallows (1 each per sweet potato bundle)

Instructions

  • Note: This recipe uses already cooked sweet potatoes. Preheat oven to 350 degrees F.
  • Peel and mash the cooked sweet potatoes. Stir in the brown sugar, orange juice, zest and nutmeg. Mix well.
  • In a separate bowl, toss the coconut with the sugar and cinnamon.
  • Press mashed potatoes around each marshmallow, creating an approximately 2 inch diameter ball. Roll the balls in the coconut and cinnamon sugar mixture.
  • Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.

  1. I'm totally with you on how you changed the title! LOL.

Strangely, we do not have a sweet potato dish that my family makes for Thanksgiving. I'm going to try a few this year to see what people like. My mom does Thanksgiving and my family's pretty particular about our traditional dishes, so I'll bring a few surprise dishes this year. I'm going to try these…thanks!

  2. Holy cow these sound good Ali! WOW!!
