Cheesy Shrimp Ciabatta

For out last get together I made this delicious Cheesy Shrimp Ciabatta. This is an appetizer that shrimp fans will love. In our family this is one of our most favorite recipes. It's so delicious!

You can go with a baguette instead if you would like bite sized portions, but it is hard to beat a fresh loaf of ciabatta bread. The baguette slices will get much crunchier so if you prefer that mouth feel, you can go with a baguette. A fresh French bread would also work great. Enjoy!


Cool Cucumber Dorito Dip



This refreshing dip is great for a hot weather get together. There is a great crunch that comes from the cucumber, and a smoothness from the sour cream. Crunchy and smooth at the same time... I'm not sure how that works but it does! This dip doesn't have a ton of seasonings, just the basics of salt and pepper. If you add more please let me know what you added and how it turned out. 

I spotted this recipe at the blog My Recipe Box. Many thanks to Britni for the original recipe, which I scaled down in size quite a bit. I made the full amount of her recipe for a party and it was still more than anyone could eat, so for my adaption I made it more of a family sized portion.

Cool Cucumber Dorito Dip
Makes approx 1 1/2 cups

Ingredients:

  • 1 peeled and diced cucumber
  • 1/3 cup sour cream
  • 1/3 cup cottage cheese
  • 1 green onion chopped
  • 1 Tbsp. mayo
  • Salt and pepper
  • Serve with: Nacho Cheese Doritos

Directions:

  1. Combine and chill for a few hours before serving to let flavors combine.  Serve with Doritos.

  2. Hi again. I made this today and it is FABULOUS! I'm not a big Dorito fan so I ate it with regular Tortilla chips. I also tried it on top of whole grain crackers. Yummy still! Thanks for the recipe!

  3. Really good, thanks for sharing. I added some of Penzey's "Sunny Paris" seasoning which really perked up the flavor of the cucumbers.
