Spinach, Bacon, Cream Cheese and Swiss Quiche
Quiche tends to get a bad wrap. Heck, even I wasn’t a fan of quiche, until I tried this recipe. Imagine a flavorful, creamy quiche filled with small pockets of cream cheese, bacon and Swiss. To describe it in one word: Heavenly. I have made this recipe, no joke, about 1-2 times a month for the past few months. I think I may be addicted.

Spinach, Bacon and Swiss Quiche
Makes one deep dish pie
Ingredients:
- 1 Frozen Deep Dish Pie Crust
- 3 eggs
- 1 1/2 c. half and half
- 10 strip bacon, fried extra crispy and crumbled
- 1/2 c. Grated Fresh Parmesan Cheese
- 1 c. Shredded Swiss Cheese
- 10 ounce box frozen chopped spinach, thawed and squeezed thoroughly
- 3 ounces cream cheese, chilled and cut into little cubes
Directions:
- Preheat oven to 350-f degrees. Add the uncooked pie crust to your pie dish.
- In a bowl, combine the eggs and half and half until thoroughly combined. Add the extra crispy bacon, Swiss cheese, Parmesan cheese, and spinach, separating the spinach a bit as you add it so it is easier to combine. Stir until incorporated.
- Gently add the cream cheese to the quiche mixture and stir just a bit. Be very gentle so the cream cheese doesn’t break apart. Pour into deep dish pie shell.
- Bake for 45-55 minutes, checking at 40 minutes. The middle of the quiche should not jiggle much when you gently shake it.
- Let rest for 30 minutes before you cut into it or it may release the liquids. Serve after allowing it to rest, or store in the fridge and reheat in the microwave.

found you via someone else who had a photo on Pinterest … um, when does the bacon go in? I had everything else in the bowl, poured it in and then went: "huh.bacon". My feeling is it should have gone in with the spinach but it was too late for that so I sprinkled them on top, tried to poke 'em in a bit. Although, I was tempted to just eat it on the side while I waited for the quiche to cook…. 😉
I second Leanne's question – when would you have us add the bacon? Also, do you thaw the pie crust first, or put it in the oven frozen? Would it work to make everything up the night before, refrigerate, and then put it in the oven in the morning?

The bacon can go in with all the filling ingredients and stirred gently. I used a pie crust that is rolled out so it isn't frozen. I didn't pre-bake it, just roll it out, put it in the pan, add the filling and bake. If you are making it the night before, keep the filling in a tupperware and add it when you are ready to bake. I think the crust would get soggy otherwise.
OH. Okay great! In the ingredients list it says to use a frozen one, that's why I asked. Thanks for the info! 🙂
I made a bacon/spinach/cheese quiche last night from another recipe and it only use three slices of bacon and no Parmesan cheese. I found it to be bland so I'm going to make yours next. Just wondering could I leave out the cream cheese to cut the calories a bit?
You could, altho using light cream cheese might be a good compromise to still get that nice creamy texture and flavor.
I’m assuming you place the crumbles bacon in the bottom of the baking pan & then pour the other ingredients over the top?
It seems I left out when to add the bacon, sorry about that! You can add it in along with the cheese in step 2. I will update the recipe now to reflect that.
