8eachhamburger bunssometimes I stretch it to 12 buns
4largehard boiled eggschopped
3canstunadrained (I use 5 oz. cans packed in water)
12ozVelveeta cheesecut into small chunks
¼cupyellow or white oniondiced (Alternatively I have used 1 Tbsp. dried minced onion)
1smallred bell pepperdiced, about 1/2 cup total
½cupMiracle Whip
1Tbsp.sweet or regular pickle relish
Instructions
Preheat oven to 400-f degrees. Combine all ingredients except the buns. Line the bottom of a baking sheet with foil.
Lay down bottom buns. Add 1/2 cup of filling to each bun, topping with the other part of your hamburger bun. If stretching the mixture to use more buns, you will want to use less than 1/2 cup.
Cover with foil tightly. (Buns will get too crunchy if baked the entire time without the foil). Bake for 25 minutes. If you would like a little bit of crunch, take the foil off for the last 5 minutes.
