2-3mediumpearspeeled and sliced 1/4″ thick. Alternatively you can use 2 cans of pears, drained and thinly sliced, when pears are not in season.
Topping:
⅔cupflour
⅓cupsugar
¼cupbutter
½teaspooncinnamon
Instructions
Preheat the oven to 350-f degrees.
Add the pie crust to a 9 inch pie plate, pressing the dough firmly to the sides so it doesn’t shrink while baking. Poke the bottom of the crust a few times with a fork. Crimp the edges however you prefer to create a nice edge on the pie.
Filling:
In a medium mixing bowl, mix all filling ingredients except pears. Pour into the unbaked pie crust.
Peel, core, and slice the pears. Spread evenly over the top of the pie filling.
Bake for 15 minutes and remove from the oven. While it is baking, prepare the crumb topping.
Crumb Topping:
In a small mixing bowl, mix all topping ingredients with a fork or your fingers until crumbly. I prefer using my hands but either way works. Sprinkle evenly over the pear layer of the pie.
Bake for 30-40 minutes, until set. Remove from oven and cool completely. Cover and chill. This is best served cold and would be fantastic with lightly sweetened whipped cream.
