Fresh broccoli florets are mixed with dried cranberries, red onion and shredded cheddar. Mix that up with homemade dressing and topped it all of with crisp bacon crumbles.
1 1/2cupsshredded cheddar cheesefreshly shredded is best
3/4cupdried cranberriesuse less if you prefer it less sweet
For the dressing:
2 1/2tablespoonsvinegar
1cupmayonnaise
1/3cupsugar
Instructions
Chop bacon into bite-sized pieces and cook until crispy. Drain on paper towels.
Chop broccoli florets into bite-size pieces. Combine broccoli, bacon, onions, cheddar cheese and dried cranberries in a large bowl.
In a separate bowl combine vinegar, sugar and mayonnaise. Pour over broccoli mixture and toss to coat. Cover and refrigerate at least a few hours before serving.
