For the frosting:
1 1/4cupsconfectioners’ sugar
1tsp.vanilla extract
4Tbsp.pure maple syrup
Instructions
For the cookies:
Beat together shortening, butter, brown sugar, egg, vanilla and maple extract (if using) in medium bowl until light and fluffy, about 3 minutes. Mix in flour, baking soda and salt. Be sure to add the flour about 1/2 cup at a time and mix in between additions. Chill the dough for 30 minutes.
Preheat the oven to 350-f degrees. Shape dough into 1-inch balls or use a medium cookie scoop to portion out balls. Place 2-inches apart on a parchment lined baking sheet.
Bake 10 to 11 minutes or until golden brown. Remove to cooling rack after a few minutes.
For the frosting:
In a small bowl mix the sugar, extract and maple syrup until desired consistency. (I added a sprinkle of milk to thin out the frosting at this point as it was very thick.) Spread onto cooled cookies.
