Instructions
Preheat oven to 350-f degrees.
In a large mixing bowl, cream butter and sugar for 4 minutes until light and fluffy and pale in color. Add egg & molasses and mix well.
Add flour, baking soda, baking powder, salt, cinnamon, ginger, cloves, and cayenne pepper. Mix just until combined.
Place sugar into small bowl. Roll dough into 1-inch balls and roll into sugar, coating well.
Place on lined baking pan, two inches apart and bake for 12-14 minutes.
Notes
To freeze the prepared dough in one large portion, double wrap it in cling wrap then freeze. To thaw, allow to sit out at room temperature for several hours.To freeze in portioned out cookie balls, scoop the dough and shape into balls. Place on a parchment lined cookie sheet, about an inch apart from each other. Freeze until solid. Transfer to a freezer Ziploc bag or Tupperware. To bake the frozen cookie balls, simply add an additional 1-2 minutes to the baking time; no need to thaw them.Recipe slightly adapted from Modern Honey.
