1/2cupgrated ParmesanI use the kind in the green can
1smalldiced oniongrate the onion if you want smaller pieces
1teaspoonsalt
1teaspoongarlic powder
1/2cupcheddar cheesecut into small to medium sized cubes
Instructions
Preheat oven to 350-f degrees. Mix all of the ingredients except the cheddar cheese. Be careful not to over mix as this can make the meatloaf tough. Mix in the cheese cubes.
Place mixture into a lightly sprayed large oven safe dish. Form into a meatloaf shape.
Bake for 1 hour, until cooked through and browned on top. I recommend using paper towels to clean up some of the grease around the meatloaf.
Top with sugar free ketchup or barbecue sauce towards the end of cooking or serve on top after the meatloaf finishes cooking.
Notes
I found this meatloaf to have a lot of flavor as is. I have received feedback that some people would've liked more flavor. Follow your heart and add in seasoning as you see fit. Recipe update: The amount of salt has been reduced by half from the original recipe. Recipe by Jam Hands.
