Cheesy Shrimp Ciabatta

For out last get together I made this delicious Cheesy Shrimp Ciabatta. This is an appetizer that shrimp fans will love. In our family this is one of our most favorite recipes. It's so delicious!

You can go with a baguette instead if you would like bite sized portions, but it is hard to beat a fresh loaf of ciabatta bread. The baguette slices will get much crunchier so if you prefer that mouth feel, you can go with a baguette. A fresh French bread would also work great. Enjoy!


French Onion Soup with Gruyere

French Onion Soup is a classic and delicious soup. The depth of flavor is delicious and comforting. It is hard to get much better than this folks. If you don't have homemade beef stock on hand, try to find a high quality bouillon. I use the jarred variety that is a paste which is branded Superior Touch Better Than Bouillon. This Martha Stewart recipe is a beloved classic in our home. Enjoy!


Ina's Carrot and Pineapple Cake with Cream Cheese Frosting

Folks, Ina makes a mean Carrot and Pineapple Cake. It is everything you'd hope for in a carrot cake. Moist, flavorful and not greasy, which is a risk when it comes to carrot cakes as they typically call for oil. The cream cheese frosting is rich and not overly sweet. Truth be told, we added a bit of extra confectioners' sugar (aka powdered sugar) to sweeten it up slightly.


Carrot cake lovers need to try out this recipe. It is truly one of the best that I've had. If you aren't the baking type, reach out to a friend or family member who enjoys baking and request it for your next gathering. For a pretty garnish, which we either forgot or skipped, top with freshly diced (small) pineapple pieces.

Glazed Corn Beef and Cabbage with Horseradish Cream Sauce

I have a bit of a backlog of recipes that I am working through posting as I had another round in the hospital recently which always throws a wrench in the works when it comes to regular blog posts. I am just about caught up now, which is a relief.

We prepared a few days late St. Patrick's Day meal. I followed this recipe for the most part, but skipped the potatoes entirely and we cooked the carrots separately. The only reason for that was I had planned on skipping the carrots as well, but in the end we prepared some as they are tasty and add a nice bright color to the dish.


One thing to keep in mind is that you need a very large pot to fit all this food.


The corned beef has a delicious brown sugar and mustard glaze. I forgot to take a picture of the horseradish cream sauce but it was tasty too. I felt it could've been thinned out a bit with some milk as mine was a bit thick, but that is a person preference. All in all, it was a delicious and beautiful meal. Enjoy!

Triple Citrus Yellow Cake with Lemon Curd Frosting

This citrusy, flavorful yellow cake starts with a cake mix and is topped with a light whipped frosting mixed with a tart lemon curd.

Feel free to use your favorite from scratch yellow cake recipe and proceed with this recipe if you have a problem with cake mixes, but I really don't mind them every once in a while for a quick sweet fix.

Moist Cinnamon Streusel Pumpkin Coffee Cake

Moist and so flavorful, this Pumpkin Coffee Cake can be enjoyed year round and is particularly good with a cup of coffee.



A light glaze decorates the top of the coffee cake, along with a sprinkling of pecans.

Like a lot of cheese dips, the delicious Taco Cheese Dip isn't very pretty, but boy is it tasty.
