Cheesy Shrimp Ciabatta

For out last get together I made this delicious Cheesy Shrimp Ciabatta. This is an appetizer that shrimp fans will love. In our family this is one of our most favorite recipes. It's so delicious!


You can go with a baguette instead if you would like bite sized portions, but it is hard to beat a fresh loaf of ciabatta bread. The baguette slices will get much crunchier so if you prefer that mouth feel, you can go with a baguette. A fresh French bread would also work great.

Simple Chicken Gyros - 20 Minute Meal


Today I have a quick meal idea that uses a few premade items I picked up at Costco. This post isn't sponsored or anything like that, but the meal is very quick and delicious!


I picked up the main ingredients at my local Costco. Those would be the roaster chicken, tzatziki sauce and mini naan. Add in a few fresh veggies and dinner is ready to go. We used Penzey's Greek Seasoning to spice up the chicken and it turned out wonderful. The tzatziki sauce I believe was the Hannah brand.

If you are a gyro fan and in the need for an extra quick and fulfilling dinner, try this recipe out. Everyone in my house loved it. Enjoy!




Simple Chicken Gyros
Makes about 8-10 servings (using mini naan)

Ingredients:

  • 1 roaster chicken, meat pieces removed and cut into bite sized pieces
  • 1 tsp. dried greek seasoning 
  • premade tzatziki sauce 
  • cucumber, diced
  • red onion, diced
  • tomatoes, sliced
  • package of pita bread or mini naan

Directions:

  1. Put the chicken pieces in a saute pan with the greek seasoning and heat until warmed through. There should be enough juices from the roaster chicken that no extra liquid is required. 
  2. Dice the cucumber, red onion and slice the tomatoes.  
  3. Warm the bread in the microwave for about 20 seconds. Add the tzatziki sauce, chicken and vegetables and serve.

Stick of Butter Rice

This delicious side dish was a hit at my house. The raving over this recipe was intense. To put it mildly, everyone loved it.


Personally, I felt that the amount of butter could be cut down a bit in this recipe. I'll leave that up to you guys to decide what you think is best. I think I would go with 1/3 cup and see how that goes next time around. If you have unsalted butter I'd also recommend that you go with that, instead of the standard salted butter. Between the condensed soup and broth, it can get a bit salty.

Note that for this recipe you want to use standard white rice, not instant rice. Enjoy!
