Chocolate Chip Muffins

It takes a great looking recipe to make me cheat on my favorite chocolate chip muffin mix. Not everyone likes using mixes for baking though, so I wanted to try out the recipe I spotted at She Wears Many Hats. Mine turned out visually a bit different, which I am going to blame on the high altitude here (4800 ft).
I did as the recipe instructed, which I read as greasing a muffin pan, not individual baking liners. Well, my muffins stuck pretty good in the pan. To get them out without tearing them apart, I took a spoon and loosened the edges while also gently pulling the muffin up from the bottom of the baking tin. Maybe it was a fluke that mine stuck, but if I made this again, I would suggest using liners and very lightly spraying them with baking spray. 
Some will say that you don’t need to spray the liners, but in my experience I have had cupcakes fall apart when I’ve tried to take the liner off. Whether or not you need to spray them seems to vary on the type/brand of liner used. Use your best judgement. 
As for the differences between my favorite ready-made mix and from scratch, the taste was great in both, with the from scratch version tasting less sweet. On day two, the from scratch recipe was less moist than the ready-made mix, but still good. So the question here is do you prefer the time saving store bought mix, or do you only bake from scratch?

Chocolate Chip Muffins
Makes about 18 standard sized muffins

Ingredients:

  • 2 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 pound (2 sticks) butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 cup milk
  • 1 cup mini chocolate chips

Directions:

  1. Preheat oven to 400-degrees F. Add the muffin liners to the muffin pans and lightly spray muffin liners with cooking spray.
  2. Whisk together flour, baking powder, and salt in a separate bowl. Set aside.
  3. Cream butter and sugars together. Add eggs. Mix to combine.
  4. Add flour mixture to butter and sugars. Mix until just combined. Be careful not to over mix.
  5. Stir in milk and chocolate chips until just combined.
  6. Fill greased muffin liners approximately 3/4 full and bake for 16-18 minutes, until lightly browned.
  7. Let cool then remove from muffin pans.

  1. Hi Ali! I've had the same problem with liners many, many times I think I am going to follow your advice and spray them before adding the batter! I bake from scratch but mostly because we do not have ready made mixes for muffins and cupcakes in Greece
