Sweet pineapple chunks, tossed with cheddar cheese and topped with buttery cracker crumbs for this unique side dish.

Ingredients
  

  • 1 cup sugar white or brown
  • 6 Tbsp. all-purpose flour
  • 2 cups grated sharp cheddar
  • 6 Tbsp. pineapple juice from can
  • 40 oz pineapple chunks, drained and juice reserved ~2 large cans
  • 1 cup crushed cracker crumbs Ritz is recommended
  • 8 Tbsp. butter melted, plus extra for greasing pan

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Grease up 8×8-inch casserole dish with butter.

Prepare filling:

  • In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

Prepare topping:

  • In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

  1. I made this as a side dish for Easter. It was a big success. Even picky eaters loved it. I used brown sugar and did not pack it when measuring, since the pineapple is already sweet. Hand grated sharp cheddar is much better than store-bought shredded cheese. This could even pass as a dessert. Love the versatility and uniqueness of a fruit dish…tasty hot or like warm…fit perfectly in my square 8×8" Pyrex dish. Thanks for sharing!
