Cranberry Jell-O Dessert

Happy Thanksgiving! Today I have a bit of a retro dessert, a cranberry Jell-O filled with pineapple and topped with a sweetened cream cheese topping.

Cranberry Jell-O Dessert

This Cranberry Jell-O Dessert is a delicious retro introduction for your next Thanksgiving dinner. A cranberry Jell-O filled with pineapple and topped with a sweetened cream cheese topping.

Ingredients
  

For the filling:

  • 2 packages raspberry jello 3 ounces
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 can crushed pineapple 8 ounce can
  • 1 can cranberry sauce whole 15 oz. can

For the topping:

  • 1/4 cup chopped walnuts optional, I used pecans
  • 1 package cream cheese 8 ounce package
  • 1/4 cup powdered sugar
  • 2 Tbsp. whipping cream
  • 1/4 cup walnuts

Instructions
 

  • Lightly spray a 9 inch square pan with cooking spray.

For the filling:

  • In a medium glass bowl, mix the raspberry jello and 1 cup boiling water together and stir for 2 minutes until completely dissolved. Stir in the cold water, pineapple, cranberry sauce and optional 1/4 cup chopped walnuts if using.
  • Mix well. Pour in the pan and cover with plastic. Refrigerate until firm.

For the topping:

  • Blend together the cream cheese, powdered sugar, and whipping cream till smooth. Spread the cream cheese mix over the top of the jello and sprinkle the chopped walnuts on top.

  1. Nuts are listed in the top list of ingredients and for the topping too. Do you add nuts to the jello mixture too? It isn’t clear in the directions. Thanks for any clarification you can give me.
