Sweet Cranberry and Orange Irish Soda Bread
Sweet Cranberry and Orange Irish Soda Bread is a flavorful twist on the classic, this time made with dried cranberries and orange zest.
The other day I made my first ever Irish Soda Bread and was blown away at how easy it was to make and how delicious it turned out.
This is not a fussy bread at all. It reminded me a lot of this fancy Williams Sonoma Dresden Stollen with Cranberries. It is not quite as light and fluffy as the Stollen, but the flavors are very similar. My family loved it.
Sweet Cranberry and Orange Irish Soda Bread
Non-traditional Irish soda bread with Craisins and other basic ingredients, baked in a springform pan. Sweet Cranberry Irish Soda Bread is so moist and is a flavorful twist on the classic.
Equipment
- 9-inch Springform Pan greased
Ingredients
- 3 1/2 cups flour
- 1/2 cup sugar
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 pint sour cream
- 2 large eggs
- 3/4 cup dried cranberries “Craisins”
- 1/2 cup dried blueberry juice infused cranberries "Blueberry Craisins" (or other dried fruit of your choice, like blueberries or cherries)
- zest of an orange and/or lemon optional but recommended
Instructions
- Combine dry ingredients in a large bowl.
- In a small bowl, beat eggs and stir in sour cream. Add the egg and sour cream mixture to the dry ingredients and stir with a wooden spoon. Batter will be thick.
- Add both varieties of Craisins, zest if using, and stir well.
- Dump the batter into a greased 9-inch springform pan.
- Dust the top with enough flour so that you can pat the batter evenly in the pan without it sticking to your hands. Make a shallow crisscross on the top with a knife.
- Bake for 50 minutes in a preheated 350ºF oven.

Oh, my goodness, if you never do another worthwile thing in your whole life, you are my Queen of Cooking, for evah. This is my FAVORITE recipe of all times (at the moment at least :). Thank-you so much for this one. Hey, everybody else…you have GOT to try this. It is scrumptiously wonderful. You haven't lived until you have cut off a big slice and slathered butter on it. This Irish soda bread was amazing. I don’t like raisins so I searched for a recipe using crasins and came across yours. Best Irish soda bread I’ve ever eaten. And easy to make.
