Barbecue Chicken Salad Sandwiches

This delicious Barbecue Chicken Salad Sandwich tastes like Summer. It also tastes like juicy tomatoes seasoned with salt and pepper and a chicken salad mixture that has been dressed up with barbecue sauce and tossed with spring greens and sliced green onions. Overall though, it tastes like Summer, which is to say, it tastes fresh and delicious!

I came across the original recipe from Trisha at My Hobbie Lobbie while participating in a fun little foodie event, the Secret Recipe Club, hosted by the great Amanda's Cookin'. The idea of it is you are assigned a fellow food blogger each month, it is kept a secret of course, and you go to their food blog and pick a recipe (or more) to make. On the assigned date, everyone posts their creations and you go and visit and see all the goodies that were made. Sort of like a secret Santa, right?

My secret blogger is Trisha at My Hobbie Lobbie , who lives in India. Isn't it cool that we bloggers can live so far apart yet be connected via the recipes we share with each other? I think that is the coolest! Trisha had a great selection of recipes for me to choose from. I considered Cream Cheese Swirl Brownies, Chocolate Chip Cookies and Cream Cheese Pound Cake. In the end I decided to go the savory route when I saw her recipe for Chicken Mayo Sandwiches.

I put my twist on her recipe by adding barbecue sauce to the chicken salad mixture, as well as sliced green onions. The green onions give a punch of flavor that I really enjoyed. Thick slices of a juicy, ripe tomato add flavor and texture. This is a great sandwich for hot Summer weather.

Barbecue Chicken Salad Sandwiches
Makes several servings


  • Leftover chicken breast & thighs, cut up into pieces or pull apart with your hands into bite sized pieces
  • spoonful mayo
  • spoonful miracle whip
  • spoonful barbecue sauce
  • spring salad mix, chopped into small pieces
  • 1 Tbsp. sliced green onions
  • tomato slices
  • salt and pepper
  • 2 slices good quality bread


1. In a mixing bowl combine the chicken pieces, mayo, miracle whip and barbecue sauce. Stir well to combine. Set aside.

2. Chop the salad mix into small pieces. Mix gently with chicken mixture and sliced green onions. Add chicken mixture to one slice of bread. Lay out tomato slices on other slice of bread, adding salt and pepper to the tomatoes to season. Combine both slices and serve.

Stick of Butter Rice

This delicious side dish was a hit at my house. The raving over this recipe was intense. To put it mildly, everyone loved it.

Personally, I felt that the amount of butter could be cut down a bit in this recipe. I'll leave that up to you guys to decide what you think is best. I think I would go with 1/3 cup and see how that goes next time around. If you have unsalted butter I'd also recommend that you go with that, instead of the standard salted butter. Between the condensed soup and broth, it can get a bit salty.

Note that for this recipe you want to use standard white rice, not instant rice. Enjoy!


Old Fashioned Ham Salad

Besides making ham and pineapple sandwiches, Ham Salad is my favorite way to use up leftover ham. For a delicious treat, serve this Ham Salad with butter crackers and slices of Swiss cheese. It is crazy delicious. Enjoy!

Cheesy Shrimp Ciabatta

For out last get together I made this delicious Cheesy Shrimp Ciabatta. This is an appetizer that shrimp fans will love. In our family this is one of our most favorite recipes. It's so delicious!

You can go with a baguette instead if you would like bite sized portions, but it is hard to beat a fresh loaf of ciabatta bread. The baguette slices will get much crunchier so if you prefer that mouth feel, you can go with a baguette. A fresh French bread would also work great. Enjoy!


Moist Cinnamon Streusel Pumpkin Coffee Cake

Moist and so flavorful, this Pumpkin Coffee Cake can be enjoyed year round and is particularly good with a cup of coffee.



A light glaze decorates the top of the coffee cake, along with a sprinkling of pecans.

Glazed Kielbasa Pineapple Bites

I found these tasty Glazed Kielbasa Bites at Real Housemoms a few weeks back. They are incredibly quick to put together and bake. If you are feeding a large crowd go ahead and double the amount of kielbasa & pineapple. The sauce should be enough even if you double the main ingredients.

Cranberry Orange Bread

Moist orange quick bread studded with cranberries. Make this one the day before you plan to eat it and let it sit out overnight (covered) for the best flavor. This is the classic Ocean Spray recipe, minus the nuts as the kids prefer it that way. Enjoy!
