Cheesy Shrimp Ciabatta

For out last get together I made this delicious Cheesy Shrimp Ciabatta. This is an appetizer that shrimp fans will love. In our family this is one of our most favorite recipes. It's so delicious!

You can go with a baguette instead if you would like bite sized portions, but it is hard to beat a fresh loaf of ciabatta bread. The baguette slices will get much crunchier so if you prefer that mouth feel, you can go with a baguette. A fresh French bread would also work great. Enjoy!

Chicken Poppy Seed Casserole

This is a comforting, easy little casserole. The filling is similar to one that I use for chicken pot pie. Very quick, buttery, delicious.

Chicken Poppy Seed Casserole
Serves 4

  • 1 roaster chicken, chicken pieces removed and bones discarded
  • 8 oz sour cream
  • 1 can cream of chicken
  • 1 can cream of celery
  • Ritz Crackers, about 1 sleeve, crushed
  • Poppy Seeds
  • 1/2 stick of butter, melted
  • Salt and freshly ground black pepper

1.Preheat oven to 325-f degrees.

2. In a 8" x 8" baking dish, place the chicken pieces along the bottom. In a separate small bowl, mix together the sour cream, cream of celery and the cream of chicken. Spread the mixture over the chicken in the baking dish. Season with salt and pepper. Top with the crushed Ritz crackers. Sprinkle poppy seeds over the casserole, lightly. Pour the melted butter over the top of the casserole.

3. Bake in the oven for 20-30 minutes, or until the casserole starts to bubble.

Recipe from my mom.

  1. My favorite thing about this recipe is that it doesn't use Cream of Mushroom like so many others (blech!) I can't wait to try it :)

  4. Cream of celery soup - does it just go with the sour cream/cream of chicken mixture? I looked at other recipes on the web and none of them contained cream of celery soup, so wasn't sure about yours.

  5. Excellent. My church friends loved it. Very easy to assemble.

  6. I was out of Ritz so I used a partial box of Chicken flavored dry dressing cubes.
That really seemed to add a whole new layer of flavor.

  7. Sounds great, but I can't eat poppy seeds, what can I use instead?

    1. Omit them. You can add another spice of your choice if you'd like.

This tasty Neiman Marcus Chicken Salad has a secret ingredient that gives the texture of the salad a wonderfully creamy texture. What is it ? Freshly whipped cream folded into the chicken, almond and grape salad. It works and it is wonderful.

Serve on a bed of curly lettuce, with crackers or on a croissant. Enjoy!
