Bodacious Broccoli Salad

This is probably the most basic broccoli salad at Jam Hands. No seeds, no grapes, no dried cranberries. Just the basics. For my salad, it was pretty light on the actual dressing, so if you like a more saturated broccoli salad I would bump up the dressing recipe. Enjoy!

Bodacious Broccoli Salad
Makes 12 servings

  • 8 slices bacon (I have used good quality pre-cooked bacon pieces with great success)
  • 2 heads fresh broccoli, chopped
  • 1 1/2 cups sharp Cheddar cheese, shredded
  • 1/2 large red onion, finely diced
  • 1/4 cup red wine vinegar
  • 1/8 cup white sugar
  • 1-2 teaspoons ground black pepper
  • 1 teaspoon salt
  • 2/3 cup mayonnaise
  • 1 teaspoon fresh lemon juice

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
  2. In a large bowl, combine broccoli, cheese, bacon and onion.
  3. Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

  1. This is one of our ALL time FAVORITE salads! I always have to make up a double batch for our bunch ... everyone always wants seconds!

  2. Very good. Try it with cranberries instead of the carrots! :-)

  3. I make this, but with red grapes cut up and added. It makes it AMAZING! I also add sunflower seeds. Yummmmm!

  4. I use half broccoli and half cauliflower

  6. This looks so so so good! I am thinking lunch today!

  7. Any suggestions for a substitution for the bacon?

    1. You could simply leave it out if you like. If you wanted you could try small cubes of ham. If that is out too, I think I'd just omit the meat component. I think it'd still taste good. :) If you want to add a sweet element to it you could add dried cranberries.

  8. I make this for the family picnic every year. I love it with the addition of cranraisins. It is always a huge hit and never any leftovers. Thanks for sharing the recipe!!
