Chicken Doritos Casserole

Chicken Doritos Casserole combines shredded chicken, cheese, cream of chicken soup, taco seasoning and Rotel. Served over Doritos for a comforting meal. This recipe dates back to my earlier years of food blogging, back around 2011.

Every once in a while this indulgent food is the best kind of food, comforting and totally delicious. Chicken Doritos Casserole fits that description perfectly.

Ingredients Needed

  • shredded chicken
  • shredded cheddar cheese
  • cream of chicken soup
  • milk & sour cream
  • can Rotel tomatoes
  • taco seasoning
  • nacho cheese Doritos

Chicken Doritos Casserole Notes

Since the chicken mixture is combined with the Doritos and baked, some of the chips will get a bit softer. If this bothers you, feel free to prepare the recipe as directed but set aside the chips while cooking. You could add them during the last few minutes on top if you liked to warm them up, or simply add them to your plate and scoop the chicken mixture on top.

Shredded chicken is mixed with cheese, cream of chicken soup, taco seasoning and Rotel until bubbling hot and served over Nacho Doritos for an ultra comforting meal.

Equipment

  • 8 Inch Square Baking Pan

Ingredients
  

  • 2 cups cooked chicken shredded or cubed
  • 1 cup cheddar cheese shredded
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 can Rotel tomatoes drained
  • 1/2 packet taco seasoning or more- to your tastes
  • 11 ounce bag of regular nacho cheese Doritos

Instructions
 

  • Preheat oven to 350-f degrees.
  • In a mixing bowl, combine all ingredients except Doritos.
  • In a greased 8"x8" baking dish, put a layer of Doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot. Alternatively, to keep the chips crunchier, you can omit them from the casserole recipe and simply spoon the cooked and heated chicken filling over a plate of the Doritos. Either way works, it is a matter of preference.

  3. I've died and gone to heaven! I made a casserole similar to this except that I used tortillas for the layers rather than Doritos. It was fabulous! I'm sure with the Doritos' texture, it would add something to it. YUM!!

  7. LOL, I just discovered you through Laura's blog (cooking photographer) but I already see we have a few things in common. I also call this trash food but I'm not quite as PC about it b/c I add "white" before the "trash." You know that taco salad made with Doritos, taco meat, and entire bottle of Catalina/French dressing, tons of cheese and a little lettuce? Yup. White trash taco salad. Loves it! I know I would love this one too. Wonder what that says about me? 😉

  17. I found this recipe yesterday and made it for diner. It was yummy. I used low-fat (1%) yogurt instead of sour cream, plus, I did not use as much milk and instead of Doritos, I used tortilla chips because I had them at home. I was surpirsed at home much my husband like it. 🙂

  20. Hannah – You could make it but don't add any chips to it, otherwise they will get super soggy.

    1. Hannah, I've cooked the chicken and made the mix (not including chips) ahead of time and just covered it and stashed it all in the fridge…that way when I get home from work, the only part that's left is crushing the doritos, putting it in the pan, and baking. 🙂

  21. So would this be good without the doritos baked in it…. like served over doritos? I was just thinking the if warmed up the next day, the doritos would be soggy. This sounds so delicious though that I can not wait to try it.

  22. I make this but I use hamburger meat instead. Brown the meat, drain, add one can cream of chicken, one can enchilada sauce, some milk and then pour this mixture over the Doritos top with loads of cheese and bake at 350 for 30 min. my niece and nephew tear this up!

  24. Hailey – Sorry I am late getting back to you. I made this quit a while back and I can't remember for sure if I drained them or not. If you are unsure, I'd go with draining them.

  25. I made this last night but used salsa, green onions and added egg noodles. It was really good, next time I will omit the noodle idea for some reason I didn't think this would be much of a meal and got it in my head to add them, and it just didn't need them. =)

  27. I made this when it was my turn for Bunko. I made it two ways. I replaced the chicken in your original recipe with ground beef and left out the tomatoes because a few of the ladies don't like them. The other version used chicken and replaced the taco seasoning with a ranch dressing mix and Ranch Doritos. It was fabulous. Thanks!!

  29. Made this tonight and it was quite yummy! My boyfriend is a big fan of the Doritos tacos at Taco Bell, so he of course liked this. I made it jut as the recipe stated EXCEPT I slow-cooked my chicken all afternoon and when I did, I threw in cumin, garlic, chili and cayenne powders for some extra flavor. I used Aldi's store-brand of Doritos and they worked out perfectly along with their brands of cheese, sour cream and Rotel. Not sure I loved it enough to make it all the time, but the boyfriend just went back for seconds, so it will be made at least once a month, I'm sure. Thanks for sharing the recipe!:)

  30. It am making this right now, and it already looks good, but you could have made some things more clear, I just got to the part where it says to top with more cheese, and I don't have any- you didn't say to reserve any for the end. I am sure it will be great though.

  31. thanks so much for this recipe! its one of our favorites.. i make it about once a week! its amazing! there are never any leftovers! i use a few chicken breasts and just cut them into strips like for fajitas.. it seems easier to me and also more texture than shredding the chicken. also when i was out of rotel once i used salsa and it was just as good:)

  36. I made this for dinner tonight when my mom and sister stopped by for dinner! I adjusted the recipe a little but it was delicious nonetheless! I added a cup of plain long grain rice and didn't do the layers. I just mixed all the ingredients together minus the Doritos. Spread the rice mixture into a 13×9 glass baking dish. Topped with chips and cheese! So yummy! Thanks!

  40. Found this on Pinterest. I usually make it with Cream of mushroom instead of the sour cream and milk, plain tortilla chips and no taco seasoning. I will try this version when my picky eater moves out.

  44. I've been making a version of this since 1971 !! My kids, all grown now, love it and they all have the recipe. I always make it with chopped green chilis, and sometimes medium Salsa by Pace. I don't add the Rotel tomatoes. Nor do I add sour cream or milk. However, I do use Cr. of Chicken and Cr. of Mushroom soups with a rotisseried chicken, and LOTS of sharp cheddar cheese or a blend. YUMMO!
    It's the best kind of comfort food! I serve it with Spanish Rice and Ranch Beans. Sometimes I also serve my homemade Salsa alongside it. THANKS, Ali!

  45. I made this and it was delicious, it was a little spicy so if you don't like spicy stuff I'd maybe just do tomatoes instead of the Rotel.

  49. This dish was and is delish. Easy to make and makes plenty. Enjoy you won’t be sorry.
    I wouldn’t layer with chips in the future, they get soggy but I used fresh chips for dipping and scooping. Yummy.

  50. Made this for friends, used the mild seasoning but was too mild, next time will use the regular seasoning. Very good!

Make this low carb by using cream cheese ( instead of soup) and mixed with chicken bouillon (Better Than Bouillon) in a saucepan then use cream instead of milk, mix everything up (except chips), cover with cheese and bake. Serve over chopped iceberg lettuce with just a couple chips crushed and sprinkled over the top. Cilantro and sliced olives make great garnishes.

    This sounds delicious! I love that it doesn’t contain cream cheese because my husband is allergic to it. I also love that it is only 8×8 and not 9×13. There is only two of us. We would be eating a big pan for a week lol. How does it freeze. I think we have a new recipe for our little family, thank you so much.

    1. Hi Debra- I hope you enjoy it! If you were to freeze this, then I would recommend not baking it with the doritos and keeping them separate from the chicken cheese mixture as directed above. You can spoon the hot chicken mixture over the doritos. I haven’t tried freezing the chicken mixture but I would think it would freeze okay.
