Dilly Tuna Macaroni Salad with Cheese

Dilly Tuna Macaroni Salad with Cheese

Folks, lately the weather here in Montana is hot, hot, hot. A chilled macaroni salad is a great option for a light lunch, or as a side for a barbeque potluck. This macaroni salad is not sweet at all, but rather it has the flavor of dill. If you are a pickle lover, this may just be the pasta salad for you.

I tried this macaroni salad with and without sliced dill pickles. I wrote them in as optional for the recipe as I think the recipe works well either way. If you LOVE pickles I'd say go for the pickles and if you want a tamer pickle flavor you could skip them. The dill gives that essense of pickle flavor so even if you skip the dill pickles you will still have that pickle flavor, just a bit less strong.

Note: This is best when prepared and eaten on the same day. Leftovers are good but it if you are making this for a get together I'd recommend making it the same day as your party. Enjoy!

Cinnamon Swirl Cream Cheese Banana Bread

Cinnamon Swirl Cream Cheese Banana Bread

Here we have it, our family favorite banana bread. Not just any banana bread, mind you. Banana Bread with a sweet cinnamon swirl and cream cheese filling.

I've made this a few times now and it has turned out wonderful each time. Please be sure to check my notes above the recipe if you are baking at a high altitude. I make a few key changes to all quick bread recipes to ensure that they don't burn and those details are found below.

This bread is just so darn good! Sweet and moist with that nice crackly, sugar cinnamon topping.

Hot Cheesy Chicken Bacon Sandwiches (Slow Cooker)

Greetings friends. It has been quite some time, hasn't it? To be frank I am not sure where to even begin, it's been so long. I haven't posted much at all since last Christmas. I've never had a blogging funk quite like this before, but I think I'm finally working my way out of it.

Tonight for dinner my family greatly enjoyed these Hot Cheesy Chicken Bacon Sandwiches. It is quick to throw together and set in the slow cooker to warm through. By dinner time you will have a warm and delicious filling for sandwiches.

In the freezer section of most grocery stores there are already baked dinner rolls and french bread rolls which only require a few minutes to warm in the oven.  They are sold in a bag by the brand Rhodes and are called "Warm & Serv." We used the soft yeast rolls tonight, brushed with a bit of melted butter before baking. The result was fantastic. I can't rave enough about that line of products. The Artisan French Rolls are my favorite.

A note about the chicken. I used pre-cooked rotisserie chicken from Costco which is very flavorful and moist. If you bake your own chicken for this, please be careful not to over bake it and dry it out. Also, please be careful to set your Slow Cooker to "warm" and not on the low/high setting accidentally. Enjoy!
