This delicious No Bake Twinkies Strawberry Shortcake is also known as a refrigerator cake. All components are already prepared making this super easy to make. Layer then chill in the fridge several hours before serving.

Twinkies Strawberry Shortcake is a dessert my kiddo came up with and prepared on their own last Easter. It is a fast and easy recipe but super tasty.

This style of dessert is also called a refrigerator cake, in that all the components are already prepared but it is assembled and then chilled for several hours to let the flavors come together. This is a great potluck or party recipe for Summer. Enjoy!

Notes: This recipe could easily be doubled to make 2 layers if you use a deep dish 9×13-inch pan or two standard pans. To do so, I would double the amount of Twinkies, Cool Whip and cream cheese and leave the rest of the ingredients the same. Tweak it to your tastes though!

I urge you not to use strawberry glaze, which is sold in the produce section by the chocolate melting chips. In my opinion it doesn’t have a good flavor. Go for real strawberry jam, preferably this delicious strawberry freezer jam that is our household favorite, or a jar of strawberry sundae topping.

Equipment

  • 9″x13″ Baking Pan

Ingredients
  

  • 13 oz. box of Twinkies cut in half so that you have very thin layers of Twinkies, as opposed to short chunks
  • 2 cups strawberries sliced
  • 1 cup good quality strawberry jam homemade is best or a jar of strawberry sundae topping
  • 8 oz. container cool whip thawed
  • 4 oz. cream cheese softened

Instructions
 

  • Slice the strawberries and set aside. Stir up the jam with a spoon until it loosens up a bit, microwaving a few seconds if necessary. You can also heat it up on the stove top with a little bit of water if you have a really thick jam.
  • Whip the cream cheese with a hand held mixer until smooth. Add in the cool whip, stirring well.
  • Cut enough Twinkies to layer the bottom of a 9×13" serving dish. Place cut side up in the pan.
  • Top with half of the cool whip mixture. Then top with half of the sliced strawberries. Top with all of the strawberry jam, spreading evenly.
  • Add the 2nd layer of cut Twinkies. Top with 2nd half of cool whip topping. Finally top with the 2nd half of the sliced strawberries. Chill for several hours before serving.
