For my low carb birthday dinner we enjoyed these adorable Mini Cheesecakes. The taste was fantastic as was the creaminess. These cheesecakes get better and better in the refrigerator. In fact, by day three they were at their best. So creamy and delicious. This would be a great make ahead dessert if you are short on time.
I topped them with a single berry to be festive and for my kids to enjoy, but personally I just had mine with a spoonful of homemade whipped cream on top. I can't rave enough about this recipe. It is wonderful. Keep reading for other garnish ideas that were a huge hit on these cheesecakes. Enjoy!

Spicy Beef Ramen is a filling and very low carb meal. Utilizing Miracle Noodles, which have zero carbs, you can have a nice, spicy bowl of ramen without the traditional noodles adding in carbs. These can be found on Amazon or at your local grocery store typically in the produce section. They do not need to be refrigerated.
Be sure to follow the directions exactly for the preparation of the noodles -- otherwise you might get some unpleasant flavored noodles. They are very quick to prepare, so please don't skip those steps. While my meat was browning I was able to prepare the noodles in less than 5 minutes, so it is super quick.
If you wanted a thicker sauce, you could try whisking in a pinch of xanthan gum and reducing the sauce a bit. I was tempted to add in a spoonful of hoisin sauce and to add the thickener to the sauce, but I refrained to keep the carb count low.
Hoisin sauce typically has a lot of sugar unless you seek out a low carb bottle or make some at home from a low carb recipe. I didn't have the time for all that so I skipped it.

Twinkies Strawberry Shortcake is a dessert my daughter came up with and prepared on her own last Easter. It is a fast and easy recipe but super tasty.
This style of dessert is also called a refrigerator cake, in that all the components are already prepared but it is prepared and then chilled for several hours to let the flavors come together.
This is a great potluck or party recipe for Summer. Enjoy!

Would you like to hear what I discovered yesterday? Well, I realized I had accidentally turned off comments on the blog for the past two months. Yikes!
About two months ago I was getting hit with a spam comment barrage so I had turned off comments for the evening, fully planning on turning them back on the next day. Whoops! Apparently I totally forgot. My apologies.
Onto the meatloaf. You get a pretty substantial serving here at only two carbs, leaving you lots of room for vegetables on the side to make up the majority of the carb count in your meal.
Of course, it doesn't have the exact texture of a traditional meatloaf, but I found it to be a great substitute. It is not tough and the diced onion lends some added texture, flavor and moisture. I would recommend going for a fresh onion for this as opposed to onion powder for this reason.
I had this with a sugar free ketchup. Tasty and even the kids loved it, onions and all. Enjoy!

Delicious and hearty Chicken, Spinach and Bean Soup. I'm not huge into beans but I loved this soup. Also, keep reading below for some news on the future of this blog!

Onto blog news. I have about 3 or 4 more recipes to post from a while back and then I'll be making a lot of low carb-high fat "keto" recipes. BUT, this doesn't mean I will never post regular recipes again. I still cook normally for my kids and I wouldn't deprive them of ever having a chocolate chip cookie again.
This way of eating for the past few weeks has been incredible for my health and well being. I used to rely on over the counter sleep medicine EVERY night to sleep, and I haven't had to take a single once since I went low carb. I have had a lot of pain in my feet from auto immune issues, at times it was crippling. The pain has gone down a lot, not 100% but still, quite a lot. I feel so much better, with more energy, no swelling in my feet, etc. I've also lost a lot of weight in that time, which I am excited about.
I wanted to let you folks know that there will be a slight change in focus on my blog, but I will still be posting 'regular' recipes along with low carb ones. I hope you enjoy!

I love macaroons. They are a Christmas treat my mother has made for a long, long time. We have our own favorite recipe which has a cherry on top, but this recipe looked too good not to try out.
As you can see you get some nice, chewy edges on these macaroons which we enjoyed quite a bit.
