A tasty side dish that both kids and adults will enjoy. If you prefer, you could leave out the onions and carrots and just use potatoes.
- 4 medium all purpose potatoes, cut into large chunks (about 2 pounds)
- 1 cup baby carrots
- 1 small onion, chopped into large chunks
- 1/3 cup olive oil
- 1 (1 oz.) pkg dry ranch mix
- Preheat oven to 425-f degrees. In a 13 x 9-inch baking pan, combine all ingredients.
- Bake, stirring occasionally, 35 minutes or until potatoes are tender and golden brown.
