Roasted Ranch Potatoes and Carrots

A tasty side dish that both kids and adults will enjoy. If you prefer, you could leave out the onions and carrots and just use potatoes.

Roasted Ranch Potatoes and Carrots
Makes 6-8 servings

  • 4 medium all purpose potatoes, cut into large chunks (about 2 pounds)
  • 1 cup baby carrots
  • 1 small onion, chopped into large chunks
  • 1/3 cup olive oil
  • 1 (1 oz.) pkg dry ranch mix
  1. Preheat oven to 425-f degrees. In a 13 x 9-inch baking pan, combine all ingredients.
  2. Bake, stirring occasionally, 35 minutes or until potatoes are tender and golden brown.

  1. I've made this a couple times and it's so yummy. I love making this when we have a family/friends gathering. It's very quick and easy to prepare.
