Country Club Chicken
Tender chicken is baked in a bacon, onion and mushroom sauce, with diced apple and white cheddar to create this dish named Country Club Chicken.
Country club chicken has perhaps some unexpected ingredients- mushroom sauce with bacon, onions, apple and white cheddar cheese. It is a break from the usual chicken dinner and deliciously good!
Ingredients needed

- chicken breasts

- cream of mushroom soup
- white wine
- sharp white cheddar
- penne
Use your favorite style of pasta for Country Club Chicken
I think a penne or similar size noodle might be preferable to a spaghetti noodle for this, as the sauce was quite thick and doesn’t work super well with thin noodles. That being said, use whatever you like the best since you are the one eating it.
Yep, it uses cream of mushroom soup!
This recipe for Country Club Chicken does use canned soup, which I know some people hate. Go ahead and make a from scratch condensed mushroom soup if you like. Personally I don’t mind cream of mushroom soup. Other varieties of condensed soups from a can can be iffy, but mushroom is one I can get on board with.
I used a golden mushroom which is why there is a yellow color to the sauce in the picture, but I think next time I make this I will stick with regular ol’ plain condensed mushroom.

Country Club Chicken

- 9″x13″ Baking Pan
Ingredients
- 5 slices bacon
- 1 c. diced onions
- 6 ounce sliced mushrooms cleaned
- 1 apple peeled, cored and diced (whatever variety you prefer, golden delicious is good)
- 2 tbsp. olive oil
- 4 large chicken breasts
- salt and pepper to taste
- 2 10.75 oz. cans cream of mushroom soup I used golden cream of mushroom
- 1/4 c. white wine You can sub. chicken broth
- 2/3 c. grated sharp white cheddar
- 8 ounces penne or any other variety of noodle you like
- extra garnish: crumbled bacon herbs or cheese
Instructions
- Preheat the oven to 350-f. Cook the bacon and transfer the bacon to paper towels to drain. Leave the grease in the pan. Season the chicken breasts well with salt and pepper. Cook in the bacon drippings for a minute or two, or until lightly browned on each side. Transfer to a lightly sprayed large casserole dish.
- Add the vegetable oil to the pan and sauté the onions for about 3 minutes, then add the sliced mushrooms and diced apple. Sauté over medium heat for 3-4 minutes. Season lightly with salt and pepper and add the crumbled bacon to the pan. Add the wine and soup, stirring to combine. Add the cheese and stir.
- Pour the sauce over the chicken breast and bake for 30 minutes. When the chicken is almost done, prepare the noodles. Garnish with herbs of your choice, more bacon or cheese and serve.
Yuuuuummy! I like everything about it, and I think canned mushroom soup isn't bad at all! I may have to Pin this one;)

I would use Cream of Chicken (just our preference) and I would not add the apple.

I baked this uncovered. If you are worried about it getting too brown, keep an eye on it and cover it if needed for the last few minutes.
When do you use the 2 Tbsp of olive oil? I keep reading the recipe and I'm not able to find it. Sorry. :/

Hi Sandra – You can use whatever cheese you’d like. You could definitely use a combination of regular cream of mushroom and golden mushroom. I think a number of combinations could work, like cream of chicken or celery along with the can of mushroom, if someone wanted to.
