Great Grandma's Famous Jimmy Cake

One of my favorite desserts of all time is a family recipe my mom has been making since..well..forever. If you are wondering, jimmies are chocolate sprinkles which are mixed into this moist cake, giving it a hint of chocolate which pairs well with a light coffee flavor.

My mom is a great cook and I have to say of all the great recipes she has made, this is probably in my top 3. Enjoy it with a cup of coffee for breakfast or dessert.

On a side note, my apologies for the lack of posts this week. My son had eye surgery early in the week, then we had a giant Spring cleaning which lasted a few days, so I have been slackin' on updating the ol' blog.

Great Grandma's Famous Jimmy Cake
Makes one 9" tube pan

  • 1/2 c. vegetable shortening (or coconut oil, which I prefer and use)
  • 1/2 c. butter, softened
  • 2 c. powdered sugar
  • 2 tsp. baking powder
  • 4 egg yolks
  • 4 egg whites, beaten
  • 1 c. cold coffee
  • 1 c. chocolate jimmies
  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. vanilla

Coffee Glaze:
  • 2 c. powdered sugar
  • 1 tsp. instant coffee
  • 1/4 c. milk, add more milk as necessary

Garnish:
  • Extra chocolate jimmies

1. Cream shortening and butter. Add powdered sugar and mix. Add egg yolks and coffee. Mix in flour, salt and baking powder. Add jimmies. Fold in beaten egg whites. Baking in 9 inch tube pan at 325-f degrees for 1 hour.

Frosting:

1. Combine the instant coffee and milk until coffee is dissolved. Add to powdered sugar. Add more milk as needed if you would like a thinner frosting.

Recipe from my mom.

  10. If you do not have a 9 inch tube pan, can you make it in a different pan? Adjustments for baking time?

  11. The only difference in baking times for another size pan would be the time of baking. I use a Bundt pan. You can even do cupcakes. All is good!!!!
