Cheesy Funeral Potatoes
These Cheesy Funeral Potatoes are a creamy and delicious side dish for any occasion. This can be thrown together very quickly for an amazing result!
All in the same week I came across several recipes for Cheesy Potatoes (also known as Funeral Potatoes, Cheesy Hashbrown Casserole, etc.) and I knew I’d have to make it. There are small variations between the recipes, but if you ballpark it to match your tastes you should be fine. In the photos shown I used a bag of frozen Potatoes O’Brien, which contained some pepper and onion pieces for extra flavor.
Cheesy Funeral Potatoes
These Cheesy Funeral Potatoes are a creamy and delicious side dish for any occasion. This can be thrown together very quickly for an amazing result!
Ingredients
- 28 oz. bag frozen hashbrowns
- 8 oz. can cream of chicken soup
- 1/2 cup sour cream
- 4 oz. cream cheese
- 1 cup cheddar cheese grated
- 2 Tbsp. melted butter
Instructions
- Preheat oven to 350-f degrees.
For the potatoes:
- In medium sauce pan mix chicken soup, sour cream and cream cheese until smooth and creamy. Add cheese and melted butter and stir until melted. Add hash-browns and stir well to combine.
- Pour hash-browns into a greased, deep 9″x9″ casserole dish. Smooth out flat and bake for 1 hour or until light brown and bubbly.

Do you put a topping on yours? I know a lot of recipes call for crushed cornflakes but I can't stand using cornflakes! These are really good with a crumb topping.
2 cups bread crumbs, 1 cup grated Parmesan cheese, 1/2 cup butter, melted. Mix it all together and spread over the top of the casserole before baking.
This is the best side dish for ham.

I love these with panko. Very crispy, but lighter than corn flakes or standard bread crumbs. Adding parmesan cheese sounds delicious. I'm going to try that next time I make this.

What is the red and green in it?
Hi Eileen – Been a while since I made this. I believe it was bits of bell pepper that came in the frozen hash brown mix. Some mixes will have some onions and bell pepper in them, and it looks like that is the kind of hashbrowns I used.
Hash browns O'Brian has red, and green peppers, and onion in the sooooo good.
Hate to be quite dumb, but are you adding in your soup in a condensed state, or adding the milk to the soup first as you would to serve the soup normally? Which do I do? Thanks for your response!
It isn't dumb at all. You add it in the condensed state. 🙂
