Bodacious Broccoli Salad

Fresh broccoli florets are mixed with freshly shredded cheddar cheese, crispy bacon, diced red onion and a sweet, creamy dressing.

This is probably the most basic broccoli salad at Jam Hands. No seeds, no grapes, no dried cranberries. Just the basics. The original recipe had very little dressing, as you can tell from the pics, so I have adjusted the recipe.

Ingredients
  

  • 8 slices bacon cooked and crumbled
  • 2 heads fresh broccoli chopped
  • 1 1/2 cups sharp cheddar cheese freshly shredded
  • 1/2 large red onion finely diced
  • 1/2 cup red wine vinegar
  • 1/4 cup white sugar
  • 1-2 teaspoons ground black pepper
  • 1 1/3 cups mayonnaise
  • 2 teaspoons lemon juice

Instructions
 

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
  • In a large bowl, combine broccoli, cheese, bacon and onion.
  • Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover and refrigerate until ready to serve.

  1. This is one of our ALL time FAVORITE salads! I always have to make up a double batch for our bunch … everyone always wants seconds!

    1. You could simply leave it out if you like. If you wanted you could try small cubes of ham. If that is out too, I think I'd just omit the meat component. I think it'd still taste good. 🙂 If you want to add a sweet element to it you could add dried cranberries.
