Chocolate Pecan Pie Bars




Chocolate Pecan Pie Bars are great for when you aren't in the mood to make pie crust from scratch. Chewy and chocolaty. It is hard to go wrong when you are dealing with pecans and chocolate.

Chocolate Pecan Pie Bars
Makes one 9" x 13" pan, about 32 bars

 


  • 1/2 cup unsalted butter, room temperature
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 large eggs
  • 3/4 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1 cup semi-sweet chocolate chips (Original recipe calls for 2 cups)
  • 2 cups pecans, coarsely chopped


1. Preheat oven to 350. Line bottom and sides of a 9×13 inch baking pan with aluminum foil.

2. In the bowl of an electric mixer, beat 1 stick room-temp butter, brown sugar, flour,and salt until coarse crumbs form. Pour mixture into prepared pan; press firmly into bottom.

3. Bake until lightly browned, 25-30 minutes. Let cool, 10 minutes.

4. Meanwhile, in same large bowl, mix eggs, corn syrup, granulated sugar, and 2 TBS melted butter until well combined. Add chocolate chips and pecans; spread over crust.

5. Bake until set, 25-30 minutes. Cool completely in pan before lifting out (use foil to lift). Cut into 32 bars. (I cut them into 16 bars)

  17. I LOOOVE pecan pie and I love chocolate. Usually I wouldn't save a recipe like this b/c I'd be too scared of eating the whole pan myself to make it, but it seems like a perfect holiday treat and I want to bring them to our family's Christmas party this year. Thanks!

  49. I live near Louisville, KY, home of the branded Derby Pie. I prefer homemade recipes to the official manufactured ones, which are too dry. These seem to be a bar version of that pie. Can't wait to try it! Gotta love food.com for great recipes.

  53. Lovely Light - I haven't tried this before but I read that you can try substiting honey for the corn syrup. As for the brown sugar, if you have access to molasses you can make your own brown sugar. I have done this many times. You start with about a cup of sugar and add about a tablespoon of molasses, then stir it up until it is totally combined. You can add a little bit more molasses to make it dark brown sugar. I hope that helps :)

  54. This looks delicious and right up my alley. I've been totally distraught lately, though, over the rising costs of pecans. I've read it's due to increased demand from the Chinese. I suppose it's nice that there's *something* they're buying from us instead of vice versa, but these price hikes are killer!
