Light and Sweet Cornbread

This great recipe comes from my sister. This would be great with some honey and whipped butter. Mmm.

Light and Sweet Cornbread

12 servings

1 1/2 C. all purpose flour
2/3 C. sugar
1/2 C. yellow or white corn meal
1 Tbsp. baking powder
1/2 tsp. salt
1 1/4 C. milk
2 large eggs, lightly beaten
1/3 C. vegetable oil
3 Tbsp. butter or margarine, melted

1. Preheat oven to 350-f degrees. Mix all ingredients and pour into a greased 8 x 8 pan. Bake 35 min or until toothpick comes out clean.
