Chocolate Marshmallow Surprise Cookies

Martha Stewart’s Surprise Cookies. The cookie itself is chocolaty and moist. On top is gooey marshmallow with a smooth topper of chocolate frosting. Make them. Love them.

Chocolate Marshmallow Surprise Cookies
Makes about 2 dozen

Ingredients:
1 3/4 cups all-purpose flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 teaspoon pure vanilla extract
12 large marshmallows, cut in half horizontally

1. Preheat oven to 375°. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.

2. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, about 2 minutes. Add egg, milk, and vanilla, and beat until well combined. Add reserved flour mixture; mix on low speed until combined.

3. Using a tablespoon or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart. Bake until cookies begin to spread and become firm, 10 to 12 minutes.

4. Remove baking sheets from oven, and place a marshmallow, cut-side down, in the center of each cookie, pressing down slightly. Return to oven, and continue baking until marshmallows begins to melt, 2 to 2 1/2 minutes. Transfer cookies to a wire rack to cool completely before frosting.

5. Spread about 1 tablespoon of frosting over each marshmallow, starting in the center and continuing outward until marshmallow is covered.

Chocolate Frosting
3 1/2 cups confectioners’ sugar
4 tablespoons (1/2 stick) unsalted butter, melted and cooled
1/4 cup cocoa powder
1/4 cup milk
1/4 teaspoon pure vanilla extract

1. Place confectioners’ sugar in a medium bowl. Whisk in butter and cocoa powder. Add milk and vanilla, and whisk until well combined.

  1. Parker . . . I've been lurking here ever since the Doggy Daze of Summer blogging contests and I must say, yours is the best recipe blogs I've ever come across. Plus, you add personal glimpses now and then too, which makes it all that much more interesting.
    But . . . I just HAD to tell you how fabulous these cookies are! Oh my word. I just made my second batch this morning and they definitely are a family favorite now.
    Hope all goes well for you as you anticipate the arrival of your daughter. I read somewhere on the blog that you were having some naming issues. Since we are done having children, as of August 17, 2007 (see my blog for more info), I can let you know three of our top girls' names: Cassandra Renae Elise; Renessa Paige Elise; Ksenia (pronounced Cassenya) Renae Elise. I just thought those might give you some options. I loved naming my babies and am sorry that I don't get to do it again.

  2. This was my Valentine's Day gift to my husband and son. Late Saturday night I took a chance and tried these out. At first, I wasn't wild about them – I wasn't sure about the marshmellow. And they didn't look exactly like yours. My frosting wasn't as dark and silky looking and I became convinced that my confectioners sugar was old. But something happened to them over night – and by Sunday night – they were gone!! I will definitely be making these again!
